The Biology of Nutrition deals with the way biological sciences address issues involving food. We will explore questions about basic food chemistry, how/why the body digests and uses food, the challenge of feeding a growing human population, and how science works to answer these questions. By the end of the course, students will be able to critically evaluate the plethora of nutritional information available in the media so as to make informed decisions on their own food choices. [MNS]
